My mom has some crazy unflattering pictures of me from when I was incredibly over weight. Looking at these pictures, I feel like my highest weight might have been somewhere in the 200s. But now I am 120-ish and couldn’t be happier or more proud of myself. It pains me to look at these old pictures but it just shows how far I have come. The old pictures are from 2008-2009.

Nothing feels better than a badass, sweaty workout. Or maybe coming back and peeling off your sweaty clothes and jumping in the shower and having the hot water soothe your proud muscles. Or maybe the feeling of the cold post-workout protein hit your lips and fuel your body. It also could be climbing into your bed at night, sore yet satisfied, knowing that you reached your daily goal. Or what about waking up the next morning as your feet take their first morning steps and feeling the hard workout ache that you earned. Go workout. Go be proud. Make yourself indecisive about what your favorite part about getting fit is.

Sweet Potato Gnocchi

Ingredients:

  • 1 yam or sweet potato
  • 1 regular potato
  • 3 tablespoons honey
  • 1 egg
  • Salt
  • 6 fresh sage leaves
  • 3 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • 2 cups flour, plus more for dusting
  • 1 large shallot, diced
  • Field greens or arugula

To Make:

  1. Boil or roast the potatoes until they are soft. Cool before handling.
  2. Mash the potatoes or run through a mill.
  3. Add honey, egg, and 1 1/2 teaspoons of salt. Mix.
  4. Slowly start adding the flour, 1/2 cup at a time until dough is formed. Should be less gooey but will still stick to your fingers. 
  5. Flour a large board and drop 2 spoons of the dough on it. With floured hands, roll the dough gently, without pushing, into ropes.
  6. Cut the ropes into pieces and drop into boiling, salted water. Allow to cook for 4-5 minutes. 
  7. Meanwhile, in another pan, heat up the butter on medium heat, drop in the sage and allow to get crisp without burning. Remove the sage and set aside. 
  8. Add in the diced shallot and saute for a few minutes on medium-low heat until butter is browned. Add in the balsamic and stir. 
  9. Carefully transfer the gnocchi into the pan, turn off the heat, and stir once to coat. Don’t stir too much or the gnocchi will get mushy and fall apart. 
  10. Arrange greens or arugula in a bowl and carefully tip the gnocchi into it. Top with shaved Parmesan cheese and the sage leaves. 
  11. Enjoy!

These were my favourite cold-weather trousers, they were always tight (you can see the tension on the button and the zipper in the first photo) but I loved them anyway. The last time I wore them was for the March progress photo, then I packed them away with the rest of my winter clothes, and I remember thinking, I bet by the time autumn comes I’ll have reduced enough that these will be fitting well and I’ll be looking pretty hot in them.

Well… yesterday it was finally chilly enough to dig out the autumn clothes, so I tried the trousers on and… hahahaaa.  Wow. I was actually quite freaked out, I had no idea I’d made that much progress over the summer, nor had I realised just how big I was before. Quite eye-opening, and I was pretty emotional. Nice to be crying in front of the mirror for a happy reason, though.

Also: I guess I need to go shopping.
